Recipe

1/ 3 cup sifted powdered sugar

1/ 2 teaspoon ground cardamom

1/ 4 cup vegetable oil

1 cup sifted fine chickpea flour

Ground pistachio, for decoration

Directions

STEP 1: Beat the powdered sugar, cardamom, and oil together for 3 minutes.

STEP 2: Add chickpea flour and beat for 1 minute more.

STEP 3: Knead the dough for 10 minutes, adding more oil if necessary (1tbs at a time)

STEP 4: Allow it to rest for 2 hours (at room temp)

STEP 5: Preheat the oven to 300 degrees Fahrenheit.

STEP 6: Roll out the dough to 12-inch thickness on a floured surface.

STEP 7: Transfer to a baking sheet lined with parchment paper, sprinkle with pistachios, and bake for about 15 minutes, keeping an eye on them after 10 minutes (always bake 1 cookie first and time it to see how it goes, you don't want to burn the whole batch! :D)

STEP 8: Because they are fragile when hot, leave them on the baking sheet for at least 15 minutes.
