    Chayote Salsa

    Ingredients
    • 2 quarts tomatoes
    • 1 cup bell pepper, diced
    • 1 cup chopped onions
    • 1 pound cilantro
    • 6 limes
    • 1/2 teaspoon southwest seasoning
    • 6 Chayotes
    Instructions
    • Chayotes should be blanched, peeled, and diced.
    • Combine the chayote pieces with the remaining ingredients.
    • Fill a glass jar halfway with the mixture.
    • Set aside for 24 hours.

    Christophene Baked Chayote

    Ingredients
    • 2 chayote berries
    • 1 cup of water
    • 1 teaspoon of salt
    • 1 chopped onion
    • 1 teaspoon margarine or butter
    • Nonstick cooking spray with freshly ground black pepper
    • 1 teaspoon freshly ground bread crumbs
    Instructions
    • Peel the squash, then cut it into small pieces and place it in a pot of salted water to soften.
    • Drain thoroughly and puree with a fork.
    • Combine the onion, butter, and freshly ground pepper in a mixing bowl.
    • Coat a baking dish with cooking spray.
    • Pour in the pureed squash, top with bread crumbs, and bake for 15 minutes in a preheated oven. As a side dish, serve.
    • Preheat the oven to 350°F.
    Ingredients 
    • 6 chayotes (about .5 pounds each)
    • 2 tbsp. melted butter
    • 1/2 finely chopped onion
    • 2 garlic cloves, finely chopped
    • 4 eggs, beaten well with salt
    • 6 ounces Monterey cheese, crumbled

    Instructions for Jack cheese

    Instructions
    • Cover the chayotes with water, bring to a boil, and cook over medium heat until tender (about 1 hour). Allow cooling after draining.
    • Cut the chayotes in half and carefully scoop out the flesh. Mash the flesh thoroughly and drain it in a colander for a few minutes.
    • Melt the butter and gently cook the onion and garlic until soft, without browning. Stir in the eggs until they are just set, as you would for scrambled eggs. Add the mashed chayote and allow the mixture to dry slightly over a low flame (about 1 minute)
    • Stuff the chayote shells with the crumbled
      cheese mixture. Place in an oven-safe dish. Cook for about 15 minutes in a 400°F oven with a strip of Monterey Jack cheese on each chayote half.

    Preheat the oven to 400 degrees Fahrenheit.

    Chayotes in White Sauce

    Ingredients
    • 1 chayote
    • Sauce Blanche
    • 1 tablespoon melted butter
    • 1 teaspoon flour
    • 1 cup milk 1 teaspoon ground black pepper
    Instructions
    • Peel and chop the chayote, then cut each wedge into three pieces (depending on the size of the chayote). Boil chayotes for 8 to 10 minutes in water.
    • When the chayotes are soft to the bite but still bright green in color, remove them from the heat and add cold water to the saucepan.
    • To serve, add a white sauce and garnish with your favorite herb.
    • Microwave butter in a microwave-safe bowl for 20 to 30 seconds, or until melted.
    • Remove. Stir the flour into the melted butter until well combined. Stir in some of the milk to fully incorporate. Then stir in the remaining milk.
    • Cook for a minute on high in the microwave.
      Remove from the heat and thoroughly stir. Return to the microwave and cook for another two minutes on high.
    • Remove. Sprinkle with black pepper. Again, vigorously stir. Continue to cook for another two minutes. Remove from the heat and give it another good stir. The sauce should be perfectly thickened.
    • Cooked, drained chayotes should be added to the cooked sauce. Stir until the chayote is completely covered in the sauce.
      Mix in fresh sweet herbs, parsley, or whatever herbs you like.

    Stuffed Chayotes

    Ingredients
    • 3 peeled and halved chayotes salt and pepper
    • 3 1/2 cups breadcrumbs
    • 2 cups grated Muenster cheese 2 eggs, beaten
    • 2 cups grated Muenster cheese 2 eggs, beaten
    Instructions
    • Boil the chayotes for 10 minutes in salted water.
    • Drain and carefully scoop out the pulp, leaving a 1/4-inch shell behind. Chop the pulp and combine it with 3 cups of breadcrumbs, cheese, salt, pepper, and eggs. Fill the shells of chayotes with this mixture.
    • Sprinkle the remaining breadcrumbs and
      Parmesan cheese over the stuffed cayotes. Spread butter on top.
    • Bake for 15-20 minutes, or until browned, at 450 degrees F.
