    Cut half a cup of walnuts and 1 cup of dates into small pieces. To warm, preheat the oven to 350°F. Place the following ingredients in a bowl with the walnuts and dates:

    3 c. flour

    1.5 cup sugar substitute

    2 teaspoon baking soda

    2 teaspoon baking powder

    2 teaspoon cinnamon

    2 cups unsweetened applesauce

    1 cup of oil

    4 eggs

    1 cup dried raisins

    Directions

    Using a wooden spoon, thoroughly combine all ingredients. Pour into two 9 x 6 x 4-inch ungreased loaf pans. then bake for 45 minutes at 350 degrees.

    Bread pudding with chocolate and orange

    Ingredients

    Spray cooking oil

    2 cups stale bread, sliced into small pieces

    a half-cup of semi-sweet chocolate chips

    1 cup skim milk

    1 1/2 cups egg replacer

    1 teaspoon cinnamon

    a quarter cup of sugar

    1 tablespoon orange zest

    Direction

    Spray eight custard dishes with nonstick cooking spray. Distribute the stale bread and chocolate chips evenly among the custard cups.

    Preheat the oven to 325 degrees Fahrenheit. To create the custard, whisk together the milk, egg substitute, cinnamon, sugar, and orange zest.

    1 cup flour

    1 teaspoon baking soda
